Ingredients
- 6 egg(s), size M
- 180 g sugar, brown
- 2 tbsp honey, liquid
- 2 tsp cinnamon powder
- 1 tsp gingerbread spice
- 1 pinch(es) salt
- 250 g almonds, ground
- 250 g hazelnuts, ground
- 200 g orange peel (chop a bit more in the blender)
- 200 g lemon peel (chop a bit more in the blender)
- to taste wafers (70 or 90 mm diameter)
- 200 g coating chocolate
Instructions
- 1. Beat the eggs together with sugar and honey for about 5 minutes until frothy using a hand mixer. Then add the remaining ingredients for the dough and mix everything well. Distribute the dough evenly onto the wafers (yields about 30 pieces of 90 mm or around 40 pieces of 70 mm).
- 2. Place the wafers on a baking sheet lined with baking paper. Bake them in the preheated oven at 150 °C top/bottom heat for about 20 minutes.
- 3. Let the lebkuchen cool down and cover them with coating chocolate if desired.
