  2. 2. Wash the mushrooms and slice them into thin pieces.
  3. 3. Heat the oil in a pan and sauté the mushrooms until they have lost their liquid.
  4. 4. Remove the mushrooms from the heat and let them cool.
  5. 5. Whisk the cream, eggs, thyme, salt, and pepper in a bowl.
  6. 6. Prick the puff pastry with a fork to prevent bubbling and place it in a tart pan.
  7. 7. Distribute the cooled mushrooms and Gouda cheese evenly over the dough.
  8. 8. Carefully pour the cream-egg mixture over the filling.
  9. 9. Place the tart in the oven and bake for 25 to 30 minutes until golden brown.
