  1. 1. Preheat the oven to 190°C conventional.
  2. 2. Boil the cannelloni tubes in salted water until al dente, drain, and toss with a drop of oil.
  3. 3. Finely chop the onion and garlic.
  4. 4. Slice the mushrooms into thin slices.
  5. 5. Brown the minced meat in a pot with a little olive oil.
  6. 6. Add the onion and garlic and sauté until translucent.
  7. 7. Add the mushrooms and cook until they have released their liquid.
  8. 8. Deglaze with the passata tomatoes, season with oregano, salt, and pepper.
  9. 9. Let the filling simmer for 10 minutes and stir in the parmesan.
  10. 10. Carefully fill the cannelloni tubes with the meat and vegetable mixture.
  11. 11. Place the filled cannelloni in a baking dish covered with a little more tomato sauce.
  12. 12. Distribute the grated graviera cheese evenly over the top.
  13. 13. Bake the cannelloni for 25 minutes in the oven until the cheese is melted and lightly browned.
  14. 14. Remove the baking dish and let it rest for 5 minutes before serving.
