  1. 1. Preheat the oven to 180 degrees Celsius. Roll out the puff pastry and place it in a springform pan (26 cm). Prick the bottom several times with a fork.
  2. 2. Wash the mushrooms and slice them. Finely dice the onions.
  3. 3. Melt the butter in a pan and sauté the mushrooms and onions until golden brown over medium heat. Season with salt and pepper. Remove the pan from the heat and let the mixture cool.
  4. 4. In a large bowl, vigorously mix the eggs, cream, grated Gouda, and crumbled blue cheese.
  5. 5. Pour the vegetable mixture over the dough in the pan. Then spread the cheese-cream-egg mixture evenly over the top.
  6. 6. Bake the quiche for 35 to 40 minutes in the oven, until the edge is golden brown and the filling is set.
  7. 7. Remove the quiche from the oven and let it rest for 5 minutes before cutting it.
