🥧 Auvergne Mushroom Quiche with Blue Cheese

Ingredients
- 500 g Puff pastry
- 300 g White mushrooms
- 2 Stück Onions
- 150 g Gouda cheese (grated)
- 80 g Blue cheese (e.g., Roquefort)
- 4 Stück Eggs
- 300 ml Heavy cream (30%)
- 30 g Butter
- 1 Prise Salt
- 1 Prise Pepper
Instructions
- 1. Preheat the oven to 180 degrees Celsius. Roll out the puff pastry and place it in a springform pan (26 cm). Prick the bottom several times with a fork.
- 2. Wash the mushrooms and slice them. Finely dice the onions.
- 3. Melt the butter in a pan and sauté the mushrooms and onions until golden brown over medium heat. Season with salt and pepper. Remove the pan from the heat and let the mixture cool.
- 4. In a large bowl, vigorously mix the eggs, cream, grated Gouda, and crumbled blue cheese.
- 5. Pour the vegetable mixture over the dough in the pan. Then spread the cheese-cream-egg mixture evenly over the top.
- 6. Bake the quiche for 35 to 40 minutes in the oven, until the edge is golden brown and the filling is set.
- 7. Remove the quiche from the oven and let it rest for 5 minutes before cutting it.
