🥞 Catalan Milk Pancakes

Ingredients
- 500 ml Milk (whole)
- 60 g Wheat flour
- 80 g Sugar
- 1 Stk Cinnamon stick
- 1 Stk Lemon zest (fresh)
- 20 g Butter (for frying)
Instructions
- 1. Add the milk, flour, half of the sugar, and the lemon zest to a pot.
- 2. Heat the mixture over medium heat and stir constantly until it thickens and bubbles. This takes about 10 minutes.
- 3. Remove the pot from the heat and let the mixture cool for 5 minutes.
- 4. Heat a non-stick pan with the butter over medium heat.
- 5. Pour small pancakes into the pan and fry them until golden brown on both sides, about 2 minutes per side.
- 6. Sprinkle the finished pancakes with the remaining sugar and cinnamon.
