  1. 1. Peel the onions and cut them into small cubes. Finely chop the garlic.
  2. 2. Heat the olive oil in a large pot. Fry the chorizo cubes until golden brown over medium heat, about 5 minutes.
  3. 3. Add the onions and garlic. Sauté the vegetables until soft, about 3 minutes.
  4. 4. Stir in the paprika powder and fry briefly until fragrant (approx. 30 seconds).
  5. 5. Pour in the passata and vegetable broth. Bring the mixture to a boil.
  6. 6. Add the chestnuts to the pot. Reduce heat to low and simmer the stew for 15 minutes.
  7. 7. Purée part of the chestnuts directly in the pot with an immersion blender to create a creamy texture.
  8. 8. Season with salt to taste. Chop the parsley and stir it in. Serve hot.
