🍲 Chestnut-Tomato Stew with Chorizo

Ingredients
- 400 g Pre-cooked chestnuts (jar)
- 2 Stück Onions
- 3 Stück Garlic cloves
- 150 g Chorizo (raw, diced)
- 800 ml Passata (strained tomatoes)
- 200 ml Vegetable broth
- 1 TL Sweet paprika powder
- 2 EL Olive oil
- 1 Prise Salt
- 1 Bund Fresh parsley
Instructions
- 1. Peel the onions and cut them into small cubes. Finely chop the garlic.
- 2. Heat the olive oil in a large pot. Fry the chorizo cubes until golden brown over medium heat, about 5 minutes.
- 3. Add the onions and garlic. Sauté the vegetables until soft, about 3 minutes.
- 4. Stir in the paprika powder and fry briefly until fragrant (approx. 30 seconds).
- 5. Pour in the passata and vegetable broth. Bring the mixture to a boil.
- 6. Add the chestnuts to the pot. Reduce heat to low and simmer the stew for 15 minutes.
- 7. Purée part of the chestnuts directly in the pot with an immersion blender to create a creamy texture.
- 8. Season with salt to taste. Chop the parsley and stir it in. Serve hot.
