🍅 Caprese Quinoa Bowl with Marinated Cherry Tomatoes

Ingredients
- 200 g Quinoa (rinsed)
- 400 g Cherry tomatoes
- 300 g Mozzarella (ball)
- 30 g Basil leaves
- 45 ml Extra virgin olive oil
- 20 ml Balsamic vinegar
- 10 g Garlic (minced)
- 4 g Salt
- 2 g Black pepper
Instructions
- 1. Cook the quinoa in salted water according to package instructions (approx. 15 minutes) and let it drain.
- 2. Halve the cherry tomatoes and place them in a bowl.
- 3. Add the minced garlic, 15 ml olive oil, 10 ml balsamic vinegar, salt, and pepper to the tomatoes. Let them marinate for 10 minutes.
- 4. Cut the mozzarella into small cubes.
- 5. Stir the cooled quinoa with the remaining olive oil and balsamic vinegar.
- 6. Divide the quinoa among four plates.
- 7. Place the marinated cherry tomatoes and mozzarella cubes on top of the quinoa.
- 8. Tear the basil leaves with your hands and sprinkle them over the bowls.
