  1. 1. Cook the quinoa in salted water according to package instructions (approx. 15 minutes) and let it drain.
  2. 2. Halve the cherry tomatoes and place them in a bowl.
  3. 3. Add the minced garlic, 15 ml olive oil, 10 ml balsamic vinegar, salt, and pepper to the tomatoes. Let them marinate for 10 minutes.
  4. 4. Cut the mozzarella into small cubes.
  5. 5. Stir the cooled quinoa with the remaining olive oil and balsamic vinegar.
  6. 6. Divide the quinoa among four plates.
  7. 7. Place the marinated cherry tomatoes and mozzarella cubes on top of the quinoa.
  8. 8. Tear the basil leaves with your hands and sprinkle them over the bowls.
