  1. 1. Wash the carrots and onion. Cut them into very small cubes.
  2. 2. Cut the chicken into small, bite-sized pieces.
  3. 3. Heat the oil in a large pot over medium heat. Sauté the onions and carrots for 3 minutes.
  4. 4. Add the chicken and cook for 2 minutes until it turns white.
  5. 5. Pour in the stock and bring the mixture to a boil.
  6. 6. Reduce heat to low. Add the noodles. Cook for 10 minutes until al dente. Stir occasionally.
  7. 7. Season the soup with salt and pepper. Serve hot.
