🍲 Butter Bean Stew with Smoked Paprika

Ingredients
- 2 x 400 g Butter beans (canned)
- 3 Stk. Carrots
- 4 Stk. Garlic cloves
- 400 g Tomatoes (canned)
- 300 ml Vegetable broth
- 2 TL Smoked paprika
- 3 EL Olive oil
- 1 Stk. Lemon
- 1 TL Salt
- 1 Bund Parsley
Instructions
- 1. Wash the carrots and cut them into small cubes.
- 2. Press the garlic through a press or chop it finely.
- 3. Heat the olive oil in a pot and sauté the carrot cubes for 3 minutes.
- 4. Add the garlic and smoked paprika and stir for 30 seconds.
- 5. Add the drained butter beans and chopped tomatoes (including juice) to the pot.
- 6. Pour in the vegetable broth, season with salt, and let everything simmer gently for 15 minutes.
- 7. Squeeze the juice of half a lemon over the stew.
- 8. Roughly chop the parsley and mix it into the stew before serving.
