  1. 1. Wash the carrots and cut them into small cubes.
  2. 2. Press the garlic through a press or chop it finely.
  3. 3. Heat the olive oil in a pot and sauté the carrot cubes for 3 minutes.
  4. 4. Add the garlic and smoked paprika and stir for 30 seconds.
  5. 5. Add the drained butter beans and chopped tomatoes (including juice) to the pot.
  6. 6. Pour in the vegetable broth, season with salt, and let everything simmer gently for 15 minutes.
  7. 7. Squeeze the juice of half a lemon over the stew.
  8. 8. Roughly chop the parsley and mix it into the stew before serving.
