  1. 1. Pat the beef dry with paper towels. Never wash it, or it will steam instead of sear.
  2. 2. Add 3 tablespoons soy sauce, 1 tablespoon sugar, the sesame oil, the grated ginger, and the chopped garlic to a bowl.
  3. 3. Stir the marinade with a spoon until the sugar completely dissolves.
  4. 4. Place the dry beef in the marinade and turn it to coat every slice.
  5. 5. Let the beef marinate for 20 minutes to make it tender and flavorful.
  6. 6. Slice the 2 spring onions into thin rings. Set them aside for garnish.
  7. 7. Heat a large frying pan (28 cm) over medium heat (level 5 of 9).
  8. 8. Add the beef and the remaining marinade to the hot pan. It will splatter a lot.
  9. 9. Sear the beef for 3 minutes until it browns on the bottom. Don’t stir, or it will steam.
  10. 10. Flip the beef once to color the other side.
  11. 11. Cook for another 2 minutes until the beef is cooked through and juicy. Don’t overcook, or it will become tough.
  12. 12. Remove the finished Bulgogi from the pan and place it on a plate. Let it rest for 2 minutes.
  13. 13. Sprinkle the beef with the spring onion rings and sesame seeds.
  14. 14. Serve the Bulgogi immediately with rice. It’s perfect when the beef is tender but not dry.
