🥗 Buddha bowl with tahini

Ingredients
- 200 g chickpeas
- 150 g quinoa
- 2 mittelgroße carrots
- 1 avocado
- 100 g spinach
- 3 EL tahini
- 2 EL lemon juice
- 1 EL olive oil
- 1 TL salt
- 0.5 TL pepper
Instructions
- 1. Rinse quinoa thoroughly and bring to a boil in a pot with 300 ml of water. Then reduce heat and simmer for 15 minutes.
- 2. Rinse and drain chickpeas. Sauté in a pan with a little olive oil until slightly crispy.
- 3. Peel carrots and cut into thin strips or grate. Halve the avocado, remove the pit, and slice.
- 4. Tear spinach into a bowl and arrange the prepared ingredients (quinoa, chickpeas, carrots, and avocado) on top.
- 5. For the dressing: Mix tahini, lemon juice, olive oil, salt, and pepper in a small bowl and stir well.
- 6. Drizzle the dressing over the Buddha bowl and serve.
