  1. 1. Rinse quinoa thoroughly and bring to a boil in a pot with 300 ml of water. Then reduce heat and simmer for 15 minutes.
  2. 2. Rinse and drain chickpeas. Sauté in a pan with a little olive oil until slightly crispy.
  3. 3. Peel carrots and cut into thin strips or grate. Halve the avocado, remove the pit, and slice.
  4. 4. Tear spinach into a bowl and arrange the prepared ingredients (quinoa, chickpeas, carrots, and avocado) on top.
  5. 5. For the dressing: Mix tahini, lemon juice, olive oil, salt, and pepper in a small bowl and stir well.
  6. 6. Drizzle the dressing over the Buddha bowl and serve.
