1. Wash the potatoes and boil them with the skin in boiling water for 20 to 30 minutes, depending on size.
2. Rinse the marjoram and shake it dry. Pluck off the leaves, set some aside, and chop the rest finely.
3. Halve the leek lengthwise, wash it, remove the tough parts, and cut it into approx. 1 cm wide strips (only the white part).
4. Wash the apple, dry it, and cut it into approx. 1 cm thick slices around the core. Dice the apple slices finely.
5. Heat the oil in a non-stick pan. Add the leek and simmer covered on low heat for approx. 6 minutes.
6. Add the apple cubes and chopped marjoram and simmer for 1 minute. Season with salt and pepper.
7. Drain the potatoes, shock them under cold water, peel them, and press them while still warm through a potato ricer into a bowl.
8. Stir the apple-leek mixture well into the potatoes, salt, pepper, and let cool. Spread the bread slices with the mixture, garnish with the marjoram leaves, and serve.
