  1. 1. Chop onion and garlic finely and sauté in a pot with olive oil until translucent.
  2. 2. Add tomatoes and sauté for a few minutes until soft.
  3. 3. Add fish stock and saffron, then bring to a boil.
  4. 4. Reduce the heat and let simmer for 10 minutes.
  5. 5. Add mussels and pollock fillet, simmer for another 10 minutes until the mussels open.
  6. 6. Season with pepper and serve.
