🍲 Borscht – Beetroot Soup

Ingredients
- 300g beetroot
- 1 carrot
- 2 potatoes
- 100g cabbage
- 1 onion
- 1L vegetable broth
- 1 tsp salt
Instructions
- 1. Chop beetroot and vegetables into small pieces.
- 2. Sauté vegetables in a large pot.
- 3. Deglaze with vegetable broth and let simmer.
- 4. Add cabbage and remaining vegetables.
- 5. Season with salt and simmer for another 15 minutes.
- 6. Serve warm, optionally garnished with sour cream.
