  1. 1. Finely chop the onion, carrot, and garlic. Heat the oil in a large pot and fry the minced meat in it until it browns.
  2. 2. Add the finely chopped vegetables to the meat and sauté for 5 minutes.
  3. 3. Stir in the tomato paste and toast it briefly. Deglaze with the red wine and let it evaporate almost completely.
  4. 4. Add the chopped tomatoes and beef broth. Season with salt and pepper. Bring the mixture to a boil.
  5. 5. Reduce heat to low and let the sauce simmer while you cook the pasta. Cover lid slightly ajar. Simmer for 45 minutes.
  6. 6. Cook the pappardelle in salted water until al dente. Drain and fold them into the sauce.
  7. 7. Serve the sauce sprinkled with grated Parmesan.
