🍝 Simple Bolognese with Firm Bite

Ingredients
- 400 g Pappardelle
- 500 g Beef mince
- 1 Stk Onion
- 1 Stk Carrot
- 2 Stk Cloves of garlic
- 2 EL Tomato paste
- 800 g Can of chopped tomatoes
- 200 ml Beef broth
- 100 ml Red wine
- 2 EL Olive oil
- 1 TL Salt
- 0.5 TL Pepper
- 50 g Parmesan
Instructions
- 1. Finely chop the onion, carrot, and garlic. Heat the oil in a large pot and fry the minced meat in it until it browns.
- 2. Add the finely chopped vegetables to the meat and sauté for 5 minutes.
- 3. Stir in the tomato paste and toast it briefly. Deglaze with the red wine and let it evaporate almost completely.
- 4. Add the chopped tomatoes and beef broth. Season with salt and pepper. Bring the mixture to a boil.
- 5. Reduce heat to low and let the sauce simmer while you cook the pasta. Cover lid slightly ajar. Simmer for 45 minutes.
- 6. Cook the pappardelle in salted water until al dente. Drain and fold them into the sauce.
- 7. Serve the sauce sprinkled with grated Parmesan.
