🍞 Bolleritas de Jamón with Saffron Tomato Sauce

Ingredients
- 250 g Ciabatta bread
- 150 g Ham (Serrano)
- 100 g Onions
- 400 g Tomatoes (canned peeled)
- 0.5 g Saffron threads
- 100 ml Beef broth
- 30 ml Olive oil
- 4 g Salt
- 2 g Paprika powder (sweet)
Instructions
- 1. Dice the onions finely.
- 2. Fry the onions in a pot with 10 ml oil over medium heat until soft, approx. 5 minutes.
- 3. Add the tomatoes and crush them with a ladle.
- 4. Pour in the beef broth and add the saffron.
- 5. Simmer the sauce over low heat for 10 minutes until it thickens.
- 6. Cut the ciabatta bread into thick slices and toast them in the pan with remaining oil until golden brown.
- 7. Cut the ham into strips.
- 8. Season the sauce with salt and paprika powder.
- 9. Place a stack of ham strips on each bread slice.
- 10. Pour the hot saffron tomato sauce over the Bolleritas and serve immediately.
