  2. 2. Fry the onions in a pot with 10 ml oil over medium heat until soft, approx. 5 minutes.
  3. 3. Add the tomatoes and crush them with a ladle.
  4. 4. Pour in the beef broth and add the saffron.
  5. 5. Simmer the sauce over low heat for 10 minutes until it thickens.
  6. 6. Cut the ciabatta bread into thick slices and toast them in the pan with remaining oil until golden brown.
  7. 7. Cut the ham into strips.
  8. 8. Season the sauce with salt and paprika powder.
  9. 9. Place a stack of ham strips on each bread slice.
  10. 10. Pour the hot saffron tomato sauce over the Bolleritas and serve immediately.
