Ingredients
- 200 g White Beans
- 1 Carrot
- 1 Onion
- 1 Stange Celery
- 700 ml Vegetable Broth
- 1 TL Thyme
- 2 EL Olive Oil
- 1 Bay Leaf
Instructions
- 1. Dice onion, carrot, and celery.
- 2. Heat oil in a pot and sauté the vegetables.
- 3. Add beans and sauté briefly.
- 4. Add broth and bay leaf, bring to a boil and simmer for 30 minutes.
- 5. Remove bay leaf and puree if desired.
- 6. Season with salt and pepper.
