  2. 2. Chop onions and carrots roughly. Mince garlic.
  3. 3. Heat butter and olive oil in a large pot. Brown meat in batches over high heat. Remove.
  4. 4. Fry onions and carrots in the fat until soft.
  5. 5. Add garlic and stir for 1 minute until fragrant.
  6. 6. Add tomato paste and glaze paste, toast for 1 minute.
  7. 7. Deglaze with red wine. Cook briefly until alcohol has evaporated.
  8. 8. Return meat, beef broth, and bouquet garni to the pot. Cover and simmer on low heat for 1.5 hours.
  9. 9. Remove bouquet garni. Season sauce with salt and pepper.
