🥩 Bistro-style Beef Stew with Carrots

Ingredients
- 800 g Beef roast (stew meat)
- 2 Stück Onions
- 4 Stück Carrots
- 3 Stück Garlic cloves
- 250 ml Dry red wine
- 200 ml Beef broth
- 1 EL Tomato paste
- 1 Bund Bouquet Garni (2 bay leaves, 1 sprig thyme, 1 sprig rosemary)
- 1 EL Glaze paste
- 30 g Butter
- 2 EL Olive oil
- nach Belieben Salt and pepper
Instructions
- 1. Cut beef into bite-sized cubes. Season with salt and pepper.
- 2. Chop onions and carrots roughly. Mince garlic.
- 3. Heat butter and olive oil in a large pot. Brown meat in batches over high heat. Remove.
- 4. Fry onions and carrots in the fat until soft.
- 5. Add garlic and stir for 1 minute until fragrant.
- 6. Add tomato paste and glaze paste, toast for 1 minute.
- 7. Deglaze with red wine. Cook briefly until alcohol has evaporated.
- 8. Return meat, beef broth, and bouquet garni to the pot. Cover and simmer on low heat for 1.5 hours.
- 9. Remove bouquet garni. Season sauce with salt and pepper.
