🍚 Black Rice with Black Bean Bowl

Ingredients
- 250 g Brown Round Rice
- 400 g Black Beans (canned, rinsed)
- 2 Stück Carrots (diced)
- 1 Stück Onion (diced)
- 2 Zehen Garlic (minced)
- 1 Teelöffel Cumin (ground)
- 1 Teelöffel Paprika Powder (sweet)
- 700 ml Vegetable Broth
- 30 ml Olive Oil
- 1 Stück Lemon (cut into wedges)
- 1/2 Teelöffel Salt
- 1/4 Teelöffel Black Pepper
Instructions
- 1. Rinse the rice under cold water until the water runs clear.
- 2. Heat the olive oil in a pot over medium heat. Sauté the onion for 3 minutes, then add carrots and garlic.
- 3. Add cumin and paprika powder and stir for 1 minute until fragrant.
- 4. Add the rice and black beans to the pot. Stir for 2 minutes to mix everything.
- 5. Pour in the vegetable broth and add salt and pepper. Bring everything to a boil.
- 6. Reduce heat to low, cover the pot and cook for 30 minutes without stirring.
- 7. Remove the pot from the heat and let it sit with the lid on for 5 minutes.
- 8. Fluff the rice with a fork and serve with lemon wedges.
