  2. 2. Heat the olive oil in a pot over medium heat. Sauté the onion for 3 minutes, then add carrots and garlic.
  3. 3. Add cumin and paprika powder and stir for 1 minute until fragrant.
  4. 4. Add the rice and black beans to the pot. Stir for 2 minutes to mix everything.
  5. 5. Pour in the vegetable broth and add salt and pepper. Bring everything to a boil.
  6. 6. Reduce heat to low, cover the pot and cook for 30 minutes without stirring.
  7. 7. Remove the pot from the heat and let it sit with the lid on for 5 minutes.
  8. 8. Fluff the rice with a fork and serve with lemon wedges.
