  1. 1. Generously salt and pepper the chicken thighs.
  2. 2. Fry the bacon in a large casserole dish over medium heat until crispy. Remove it from the pan.
  3. 3. Sear the chicken thighs in the bacon fat until golden brown on both sides. Remove them from the pan.
  4. 4. Cook the chopped shallots in the pan for 3 minutes until translucent.
  5. 5. Deglaze with the cognac and let it boil off for 1 minute (careful: flame).
  6. 6. Add the cream and mustard to the pan and stir until the sauce is smooth.
  7. 7. Return the chicken and bacon to the pan. Cover the pot and cook over medium heat for 20 minutes.
  8. 8. Uncover the pot and let the sauce thicken for 5 minutes if necessary.
