🍗 Bistro Chicken with Mustard Cream Sauce

Ingredients
- 600 g Chicken thighs (boneless)
- 100 g Bacon (diced)
- 3 Stück Shallots
- 2 Esslöffel Cognac
- 200 ml Chicken broth
- 200 ml Heavy cream
- 2 Esslöffel Mustard (French or Dijon)
- 20 g Butter
- 1 Prise Salt
- 1 Prise Pepper
Instructions
- 1. Generously salt and pepper the chicken thighs.
- 2. Fry the bacon in a large casserole dish over medium heat until crispy. Remove it from the pan.
- 3. Sear the chicken thighs in the bacon fat until golden brown on both sides. Remove them from the pan.
- 4. Cook the chopped shallots in the pan for 3 minutes until translucent.
- 5. Deglaze with the cognac and let it boil off for 1 minute (careful: flame).
- 6. Add the cream and mustard to the pan and stir until the sauce is smooth.
- 7. Return the chicken and bacon to the pan. Cover the pot and cook over medium heat for 20 minutes.
- 8. Uncover the pot and let the sauce thicken for 5 minutes if necessary.
