  1. 1. Grill the eggplant until the skin is blackened and the flesh is soft.
  2. 2. Mash the peeled eggplant in a bowl.
  3. 3. Chop onion and ginger finely and sauté in a pan.
  4. 4. Add the tomato and sauté briefly.
  5. 5. Sprinkle in cumin, coriander and chili powder, mix well.
  6. 6. Add the mashed eggplant and mix well.
  7. 7. Season with salt and serve.
