  1. 1. Preheat the oven to 200 °C (390 °F) conventional heat.
  2. 2. Bake the puff pastry in the empty oven on a baking sheet for 10 minutes until it puffs up slightly. Remove the sheet and let the pastry cool. Reduce the oven temperature to 180 °C (350 °F).
  3. 3. Boil the shrimp in salted water for 2-3 minutes until pink. Drain and let cool. Cut the avocados in half, remove the pit, and mash the flesh with a fork.
  4. 4. Slice the red onion into very thin rings and marinate them briefly with lemon juice, salt, and chili to mellow the sharpness.
  5. 5. Mix the mashed avocado flesh with lemon juice and cooking oil to form a spreadable paste.
  6. 6. Spread the avocado mixture evenly over the pre-baked puff pastry. Arrange the shrimp on top. Place the marinated onion rings on top. Garnish with coriander leaves.
  7. 7. Return the tart to the oven and bake for another 10-12 minutes at 180 °C (350 °F) until the edges are golden brown.
  8. 8. Remove the tart from the oven and serve warm or at room temperature.
