🦐 Avocado Tart with Shrimp and Lemon

Ingredients
- 1 Packung (ca. 450 g) Puff pastry (store-bought), frozen
- 300 g Shrimp (frozen, peeled)
- 2 Stück Avocados
- 1 Stück Lemon
- 2 EL Cooking oil
- 0.5 Stück Red onion
- 1 Prise Salt
- 0.5 TL Chili (fresh or powder)
- 1 Bund Coriander (cilantro)
Instructions
- 1. Preheat the oven to 200 °C (390 °F) conventional heat.
- 2. Bake the puff pastry in the empty oven on a baking sheet for 10 minutes until it puffs up slightly. Remove the sheet and let the pastry cool. Reduce the oven temperature to 180 °C (350 °F).
- 3. Boil the shrimp in salted water for 2-3 minutes until pink. Drain and let cool. Cut the avocados in half, remove the pit, and mash the flesh with a fork.
- 4. Slice the red onion into very thin rings and marinate them briefly with lemon juice, salt, and chili to mellow the sharpness.
- 5. Mix the mashed avocado flesh with lemon juice and cooking oil to form a spreadable paste.
- 6. Spread the avocado mixture evenly over the pre-baked puff pastry. Arrange the shrimp on top. Place the marinated onion rings on top. Garnish with coriander leaves.
- 7. Return the tart to the oven and bake for another 10-12 minutes at 180 °C (350 °F) until the edges are golden brown.
- 8. Remove the tart from the oven and serve warm or at room temperature.
