  1. 1. Wash the potatoes thoroughly. Boil them in salted water with the skin on for 20 minutes until soft.
  2. 2. Dice the onion and peppers. Fry them in half of the oil for 10 minutes until soft.
  3. 3. Peel the warm potatoes and mash them roughly with a fork. Mix with the vegetables and 1 tsp salt.
  4. 4. Whisk the eggs in a large bowl. Add the potato mixture and stir well.
  5. 5. Fry the tortilla in a non-stick pan over medium heat for 4 minutes on one side.
  6. 6. Turn the tortilla out onto a large plate and slide it back into the pan. Fry for 4 minutes on the other side.
  7. 7. Slice the avocados into wedges. Cut the finished tortilla into 8 pieces and serve with avocado and remaining oil.
