🥑 Avocado Tortilla Bites with Peppers

Ingredients
- 500 g Potatoes
- 1 Stk. Onion
- 6 Stk. Eggs
- 2 Stk. Red Peppers
- 2 Stk. Avocado
- 4 EL Olive Oil
- 1 TL Salt
- 0.5 TL Black Pepper
Instructions
- 1. Wash the potatoes thoroughly. Boil them in salted water with the skin on for 20 minutes until soft.
- 2. Dice the onion and peppers. Fry them in half of the oil for 10 minutes until soft.
- 3. Peel the warm potatoes and mash them roughly with a fork. Mix with the vegetables and 1 tsp salt.
- 4. Whisk the eggs in a large bowl. Add the potato mixture and stir well.
- 5. Fry the tortilla in a non-stick pan over medium heat for 4 minutes on one side.
- 6. Turn the tortilla out onto a large plate and slide it back into the pan. Fry for 4 minutes on the other side.
- 7. Slice the avocados into wedges. Cut the finished tortilla into 8 pieces and serve with avocado and remaining oil.
