🍳 Eggplant Rolls with Feta

Ingredients
- 1 eggplant
- 100 g feta cheese
- 2 EL olive oil
- 1 EL lemon juice
- eine Handvoll fresh basil
- 0.5 TL pepper
- 1 TL salt
- 1 Zehe, gehackt garlic
Instructions
- 1. Slice the eggplant thinly and hollow out the inside slightly.
- 2. Heat olive oil in a pan and sauté the eggplant slices.
- 3. Mix feta, chopped garlic, and fresh basil together.
- 4. Place the mixture on the eggplant slices and roll them up.
- 5. Place the rolls in a baking dish and drizzle with olive oil and lemon juice.
- 6. Bake at 180°C for about 15 minutes until golden brown.
