🍆 Classic Oven Parmigiana di Melanzane

Ingredients
- 600 g Aubergines
- 250 g Fresh Mozzarella
- 50 g Parmesan (grated)
- 400 g Canned Tomatoes
- 10 g Fresh Basil
- 40 ml Olive Oil
- 5 g Salt
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Wash the aubergines and slice them into 0.5 cm thick rounds.
- 3. Sprinkle the slices with salt and let them sit for 20 minutes to remove bitterness.
- 4. Pat the aubergines dry with a kitchen towel.
- 5. Season the tomatoes with a little salt and chop the basil roughly.
- 6. Slice the mozzarella into thin rounds.
- 7. Place a layer of aubergines in a baking dish and drizzle with olive oil.
- 8. Spread tomatoes, mozzarella, and Parmesan over it. Repeat the layers.
- 9. Bake the dish for 30 minutes in the oven until the surface is golden brown.
