🥗 Arugula Quinoa Bowl with Chickpeas

Ingredients
- 100g Quinoa
- 200g Chickpeas (canned)
- 50g Arugula
- 100g Cherry Tomatoes
- 1 EL Olive Oil
- 1 EL Lemon Juice
- nach Geschmack Salt
- nach Geschmack Pepper
Instructions
- 1. Rinse quinoa in a sieve and cook according to package instructions.
- 2. Drain chickpeas and rinse with water.
- 3. Place arugula and cherry tomatoes in a bowl.
- 4. Add cooked quinoa and chickpeas.
- 5. Drizzle with olive oil and lemon juice, season with salt and pepper.
- 6. Mix well and serve.
