🦑 Homemade Black Rice Dish with Squid

Ingredients
- 300 g Bomba rice
- 400 g Squid rings (fresh or frozen)
- 200 g Shrimp (peeled)
- 2 Stk Squid ink
- 4 Stk Garlic cloves
- 800 ml Fish broth
- 2 EL Tomato paste
- 3 EL Olive oil
- 1 TL Salt
- 2 EL Parsley (chopped)
Instructions
- 1. Dissolve the squid ink in a small amount of warm fish broth.
- 2. Fry the finely chopped garlic in olive oil until golden brown.
- 3. Stir in the tomato paste and cook for 1 minute.
- 4. Add the rice and stir until it turns whitish.
- 5. Pour in the remaining fish broth and the ink mixture.
- 6. Cook on medium heat for 10 minutes without stirring.
- 7. Press the squid and shrimp into the rice.
- 8. Cook for another 8 minutes on low heat.
- 9. Remove from heat, sprinkle with parsley and let rest for 5 minutes.
