  1. 1. Preheat the oven to 180 degrees Celsius (conventional heat).
  2. 2. Heat oil in an oven-safe skillet or gratin dish. Sear the vegetarian mince until dry and brown.
  3. 3. Add the onions and carrots. Steam until soft, about 5 minutes.
  4. 4. Stir in the paprika powder and passata. Simmer the sauce for 2 minutes.
  5. 5. Add the rice and vegetable broth. Stir and season with salt.
  6. 6. Cover the pan tightly with foil. Place in the oven and bake for 20 minutes.
  7. 7. Remove foil and bake for another 10 minutes until sauce thickens and rice is cooked.
  8. 8. Sprinkle parsley on top and let the dish rest for 5 minutes before serving.
