🥘 Arroz Horno with Classic Tomato-Onion Sauce

Ingredients
- 250 g Round Rice (Bomba or medium grain)
- 250 g Vegetarian Meatballs or Minced Meat Alternative
- 2 Stück Onions (finely chopped)
- 2 Stück Carrots (grated)
- 400 ml Passata
- 1 TL Paprika Powder (sweet)
- 3 EL Rapeseed Oil
- 700 ml Vegetable Broth (warm)
- 1 TL Salt
- 2 EL Parsley (chopped)
Instructions
- 1. Preheat the oven to 180 degrees Celsius (conventional heat).
- 2. Heat oil in an oven-safe skillet or gratin dish. Sear the vegetarian mince until dry and brown.
- 3. Add the onions and carrots. Steam until soft, about 5 minutes.
- 4. Stir in the paprika powder and passata. Simmer the sauce for 2 minutes.
- 5. Add the rice and vegetable broth. Stir and season with salt.
- 6. Cover the pan tightly with foil. Place in the oven and bake for 20 minutes.
- 7. Remove foil and bake for another 10 minutes until sauce thickens and rice is cooked.
- 8. Sprinkle parsley on top and let the dish rest for 5 minutes before serving.
