🥗 Arabic Chickpea Bowl

Ingredients
- 400 g (Dose) chickpeas
- 150 g quinoa
- 2 tomatoes
- 1 cucumber
- 1 onion
- 2 EL olive oil
- 2 EL lemon juice
- 1 Bund parsley
- 1 TL salt
- 0.5 TL pepper
Instructions
- 1. Cook quinoa according to package instructions.
- 2. Drain and rinse chickpeas.
- 3. Dice tomatoes and cucumber.
- 4. Finely chop onion.
- 5. Mix chickpeas, tomatoes, cucumber, onion, and parsley in a bowl.
- 6. Add olive oil and lemon juice, season with salt and pepper.
- 7. Divide quinoa into bowls and top with chickpea mixture.
