1. Separate the eggs. Whisk the egg yolks in a bowl with the honey, the quark, and the milk.
2. Cube the bread roughly and fold it into the egg yolk mixture. (Add a little flour if the bread is very fresh.)
3. Put the egg whites in a tall container and beat them stiff using the beaters of a hand mixer. Gently fold the stiff egg whites into the egg yolk-bread mixture.
4. Wash the apples, dry them, quarter them, remove the core, and dice them. Roughly chop the walnuts.
5. Heat the oil in a large non-stick pan. Add the apples and nuts, then pour the batter over them. Cook the pancake covered over medium heat for about 4 minutes until golden yellow.
6. Quarter the pancake in the pan, flip it, and bake for another 2 minutes. Cut it into pieces using two spatulas.
7. Put the powdered sugar into a fine sieve and dust the finished pancake with it. Serve the dish.
