  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Peel the apples, remove the core, and cut them into thin slices.
  3. 3. Toss the apple slices with sugar, cinnamon, and lemon juice.
  4. 4. Divide the dough into two halves. Roll one half into a circle (approx. 25 cm diameter) on a baking sheet.
  5. 5. Spread the apple mixture on the dough base, leaving a border of approx. 3 cm free.
  6. 6. Roll the second dough sheet into strips and lay them diagonally over the apples to create a lattice pattern.
  7. 7. Brush the dough edges with beaten egg yolk and sprinkle some sugar on top.
  8. 8. Bake the crostata for approx. 35 minutes until golden brown.
