Ingredients
- 200g Salmon fillet
- 100g Spinach
- 100g Tomatoes
- 1 Onion
- 1 Garlic clove
- 2 EL Olive oil
- 1 TL Salt
- 1 TL Pepper
Instructions
- 1. Preheat the air fryer to 180 °C. This takes about 3 min. Important: Preheating is mandatory for crispy salmon.
- 2. Dice the onion into fine cubes. Ensure uniform size for even cooking.
- 3. Finely chop the clove of garlic. Not too small, or it will burn quickly.
- 4. Dice the 100g tomatoes into small cubes. Do not seed them, it adds more flavor.
- 5. Add the 2 tbsp olive oil to a small pan. Heat it to level 6 (out of 9).
- 6. Fry the onion cubes for about 2 min in the pan, until they are translucent (= see-through).
- 7. Add the chopped garlic. Fry for 1 min until fragrant. Do not let it turn brown!
- 8. Add the 100g spinach to the pan. Stir for 1 min until it wilts.
- 9. Remove the pan from the heat. Mix the tomato cubes into the spinach.
- 10. Season the spinach-tomato mixture with half of the salt and pepper.
- 11. Place the spinach mixture in the air fryer basket. Spread it out flat.
- 12. Rub the 200g salmon fillet with the remaining salt and pepper. Ensure even seasoning.
- 13. Place the salmon fillet directly on top of the spinach mixture in the air fryer.
- 14. Cook the dish in the air fryer at 180 °C for 12 min. The salmon becomes opaque.
- 15. Check the cooking time: A knife should slide easily into the salmon. If so, remove it.
- 16. Serve the dish immediately. It is perfect when the salmon is pink in the center and the spinach stays juicy.
