  1. 1. Pat the 400 g chicken wings dry with paper towels. Never wash them, or they’ll get soggy.
  2. 2. Put the dry wings into a large bowl. This gives you enough room to toss them.
  3. 3. Sprinkle the 2 tablespoons cornstarch over the wings. It will make them extra crispy later.
  4. 4. Add 1 teaspoon salt and 1 teaspoon pepper. This seasons the crust from the inside.
  5. 5. Toss the wings with your hands until they are white and dusty. Don’t leave any clumps.
  6. 6. Preheat the air fryer to 180 °C. This takes about 3 minutes. Hot air needs a head start.
  7. 7. Place the wings in the basket. Leave a 2 cm gap between each piece.
  8. 8. Cook the wings at 180 °C for 20 minutes. The heat slowly makes them crispy.
  9. 9. Pull out the basket and flip the wings with tongs. This helps them brown evenly.
  10. 10. Put them back in the air fryer and cook for another 10 minutes at 180 °C. Now they’ll turn golden brown.
  11. 11. In a small bowl, mix 2 tablespoons honey, 2 tablespoons Sriracha, 1 tablespoon soy sauce, and 1 tablespoon lemon juice. The dip will be spicy and sweet.
  12. 12. Take the hot wings out of the air fryer. They should sound crunchy and crisp now.
  13. 13. Pour half of the dip (about 3 tablespoons) over the wings and toss to coat. Don’t use too much, or they’ll get soggy.
  14. 14. Place the glazed wings on a plate. Keep the remaining dip in the bowl for dipping.
  15. 15. Serve the wings immediately with the remaining dip on the side. Perfect: crust cracks, meat is juicy.
