  1. 1. Peel the 300 g potatoes and remove all eyes.
  2. 2. Cut the potatoes into small, approximately 2 cm cubes.
  3. 3. Cook the potato cubes in salted water for about 15 minutes, until they are tender.
  4. 4. Drain the water and let the potatoes drain for 2 minutes.
  5. 5. Purée the hot potatoes into a smooth mash.
  6. 6. Grate the 100 g cheddar finely and fold it into the mash.
  7. 7. Crack the 2 eggs lightly in a separate bowl.
  8. 8. Mix the flour with the baking powder, salt and pepper.
  9. 9. Add the flour mixture and the eggs to the potato-cheddar dough.
  10. 10. Knead everything into a workable dough and divide it into 8 portions.
  11. 11. Shape the portions into compact balls and place them in the air fryer.
  12. 12. Preheat the air fryer to 180 °C until it is ready.
  13. 13. Bake the puffs for about 12 minutes, until they are golden brown and crispy.
  14. 14. Let the puffs sit in the air fryer for 3 minutes to firm up.
  15. 15. Carefully remove the puffs and serve them immediately.
  16. 16. Check for success: The surface should be crispy and not soft.
