1. Preheat the air fryer to 180 °C. This takes about 3 minutes and ensures crispy wraps.
2. Wash the fresh spinach thoroughly under cold water. Remove any tough stems.
3. Dry the spinach well with a kitchen towel. Water prevents browning and makes it soggy.
4. Peel the onion. Dice it into small cubes.
5. Peel the garlic clove. Crush it with the side of your knife and chop it finely.
6. Add 1 tablespoon of olive oil to a small frying pan. Heat it over medium heat.
7. Sauté the onion cubes for about 3 minutes, until they are translucent and soft.
8. Add the chopped garlic. Sauté it for 1 minute, until fragrant. Don't let it brown.
9. Add the dry spinach to the pan. Sauté it for 2 minutes, until it has wilted.
10. Remove the pan from the heat. Let the spinach mixture cool slightly so the wraps don't tear.
11. Crumble the feta into a small bowl. Lightly mash it with a fork.
12. Stir the feta with the Greek yogurt until smooth. The mixture should be creamy and binding.
13. Lay the tortilla wraps flat. Spread the spinach mixture evenly over both.
14. Drizzle the feta-yogurt cream over the spinach filling. Sprinkle with salt and pepper.
15. Fold the bottom and top edges of the wraps inwards. Roll them tightly from bottom to top.
16. Place the wraps seam-side down in the air fryer. Cook them for a total of 8 minutes at 180 °C, turning after 4 minutes, until golden brown and crispy all over.
17. Cut the wraps diagonally. Serve them immediately while the filling is still warm.
