- 2 Eggs
- 100 g Gouda
- 1 Onions
- 150 g Cherry Tomatoes
- 1 TL Salt
- 1 TL Pepper
Instructions
- 1. Take the puff pastry out of the freezer and let it thaw at room temperature for 15 minutes.
- 2. Cut the thawed puff pastry into 4 equal squares with a sharp knife.
- 3. Peel the onion and dice it into small, fine cubes.
- 4. Halve the 150 g cherry tomatoes and set them aside.
- 5. Preheat the air fryer to 180 °C so it’s ready to go.
- 6. Sauté the onion cubes in a small pan over medium heat for about 3 minutes, until they are soft.
- 7. Add the halved tomatoes and cook everything for another 2 minutes, until the tomatoes soften.
- 8. Remove the pan from the heat and stir the salt, pepper, and grated eggs into the vegetable filling.
- 9. Spread the warm vegetable filling evenly onto the lower half of the 4 pastry squares.
- 10. Sprinkle the grated Gouda over the filling.
- 11. Fold the top pastry side over the filling and firmly press the edges together with your fingers.
- 12. Cut small holes into the top of each pastry with a fork to allow steam to escape.
- 13. Place the pastries in the basket and bake them for 15 minutes at 180 °C, until golden brown and puffed up.
- 14. Let the pastries sit in the basket for 2 minutes to stabilize the pastry, then serve them warm.
