🍽️ Air-Fried Stuffed Zucchini

Ingredients
- 2 Zucchini
- 100 g Quinoa
- 100 g Cherry Tomatoes
- 1 Onion
- 2 Garlic Clove
- 1 TL Paprika Powder
- 1 TL Salt
- 1 TL Pepper
- 2 EL Olive Oil
Instructions
- 1. Wash the 2 zucchini under running water and dry them well.
- 2. Cut off the ends of the zucchini and discard them.
- 3. Carefully scoop out the insides of the zucchini with a teaspoon to create a small shell.
- 4. Place the scooped-out zucchini insides on a cutting board and chop them finely.
- 5. Rinse the 100 g quinoa in a fine sieve under cold water until the water runs clear.
- 6. Put the quinoa in a pot, cover it with 200 ml water, and bring it to a boil.
- 7. Reduce the heat to level 2, cover the pot, and let the quinoa steam for 10 minutes.
- 8. Peel the onion and dice it finely.
- 9. Peel the 2 garlic cloves and chop them very finely.
- 10. Halve the 100 g cherry tomatoes and set them aside.
- 11. Preheat the air fryer to 180 °C until it beeps.
- 12. Heat 2 tablespoons olive oil in a large pan and sauté the onion cubes for 3 minutes until translucent.
- 13. Add the chopped garlic and sauté it for 1 minute until fragrant.
- 14. Add the halved tomatoes and chopped zucchini insides to the pan and cook for 4 minutes.
- 15. Stir the cooked quinoa and the spices (1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon paprika) into the vegetable mixture.
- 16. Firmly fill the zucchini shells with the filling and place them in the air fryer basket.
- 17. Cook the stuffed zucchini for 15 minutes at 180 °C, until a fork easily pierces the zucchini.
- 18. Let the zucchini sit in the air fryer for 2 minutes before plating.
